
CHOCOLATE MARSHMALLOW PROTEIN MUFFINS
INGREDIENTS:
- MUFFIN:
- 3/4 Cup Whole Wheat Flour
- 3/4 Cup OxyWhey Vanilla Protein Powder (Click to get yours here!)
- 3/4 Cup Almond Milk
- 1/4 Cup No Fat Greek Yogurt
- 1/2 Cup Sweetener
- 1/2 Cup Apple Sauce
- 1/4 Cup Coconut Oil
- 2 Egg Whites
- 1/2 Tsp Baking Powder
- 1/4 Tsp Baking Soda
- 12 Marshmallows
- FROSTING:
- 1 Cup Extra Light Cream Cheese
- 3/4 Cup Sweetener
- 1/4 Cup Cacao Powder
- 3 Tbsp Almond Milk
METHOD:
1. Pre-heat oven to 175C/347F
2. In a large bowl, mix together all the cake ingredients except the marshmallow
3. Pour the batter into 12 cupcake moulds and push 1 marshmallow into each
4. Bake for 25 minutes
5. Blend together the frosting ingredients
6. Frost evenly onto the 12 muffins
7. Devour!
